At the top of the list:

Black Sheep Cafe- Shek-O So groovy in a surreal Hawaiian way. You'll feel just like you had real magic mushrooms in your magic mushroom pizza. It feels like a backpacker place in Thailand or Indonesia with it's thatched roof ceiling and sarong tablecloths. Oh and the food is top notch- especially the pizzas.

Cococobana- Deepwater bay Beach
This place is so chic, it belongs in St. Tropez. It's not a surprise it's owned by a French guy. Plus the view of Deepwater Bay is unbeatable

South Bay Beach Club- South Bay beach HK-

This place makes me think of Mykonos with all the glam Euopeans in their oversized sunglasses and groovy beach gear. Lots of models and clubby looking people hang out here. French is the predominant language. The food is typical snack food-burgers and such.. It's an awesome place to drink some cold white wine. They sometimes also have DJs. you seriously do not feel like you are in Hong Kong.

Ohlala- Pui O beach Lantau-
This beach getaway is very secluded, but well worth the ferry and bus ride. The place is so funky and has and amazing natural surroundings. We heard they serve a mean margarita and the food is good too.
Take the ferry to Mui Wo and get any any of the buses at the pier 1,2,4. tell the bus driver Pui O beach.

Maybe you could try doing a boat party for her? I had a friend who rented a boat for a party and it rocked. cost ~500-600 per person food inclusive.
